Foodie Friday- Caramel Rolls

Hello lovelies!

I don't know if there is something in the air this week, but my inclination to do anything productive has been pretty much at zero since Monday. The lack of motivation seems to be traveling around, as many of my friends and family seem to be having some issues as well. I was really having trouble getting back on track this week and into my groove, so I asked some of my friends what it is they do when they are trying to kick themselves back into gear. Here's what they said:

"Stop stressing so much about not getting moving and do something else for a little while until my subconscious mind kicks into gear."

"Go for a photoshoot!"

 "Dance!!!"

 "Eat ice cream. :P"

"Take a bubblebath!"

"Just push through it and do it anyway!"


Then there were a couple of deeply inappropriate joking answers about the use of illegal drugs, which I cannot and will not recommend here! :P

After trying a few of these wonderful recommendations, I was feeling a difference, but it's still been an incredibly lazy week for me. Here's to hoping next week is more productive!

Anyway, more to the point- I didn't know what to do for Foodie Friday this week, because the fact of the matter was: I just didn't feel like cooking. I did feel like nomming on something delicious though, so I took all my cookbooks down from their cupboard and flipped through them on the couch while watching "No Reservations"- (love Tony Bourdain, what a guy!) and this is what came to me. 

Easy peasey and totally delicious Caramel Rolls, made in the crockpot. Seriously, this recipe is so easy, I almost felt like I was cheating- and you will too. Amazing results with little to no effort- that's my kind of recipe! The book I was inspired by was 101 Things To Do With a Slow Cooker by Stephanie Ashcraft and Janet Eyring.



Here's what you'll need.

Ingredients

2 packages (8oz a piece) refrigerator biscuits
1/4 cup melted butter
1/2 brown sugar
1 teaspoon cinnamon


Yup, that's all! Now lets get cookin'.





First, melt your butter in a small bowl. When you have it properly nuked, take your little biscuits for a delightful swim. Mmm, a buttery, buttery swim. 



Next, take your brown sugar and cinnamon and whisk them together in a bowl. Take your buttered biscuit and dip in into the mixture. You may have to help it along the way, patting it down with delicious sugar mixture. Don't skimp!




Now nestle all your biscuits together lovingly in your greased slow cooker. Aren't they cute?

Put your slow cooker on high and cook the biscuits for 1 hour and 15 minutes or until done.


Then, it's time to NOM!


Now, the truth of the matter is that mine got totally burnt on the sides- bummer time. The recipe I used said that they should be cooked for 2 hours to 2 1/2 hours, and I cooked them for 1 hour and 50 minutes and the sides were burnt. Now, I know if I had taken them out when I checked them at 1 and 1/2 hours, they would have been absolutely perfect. If only I had trusted my instincts!

 Moral of the story being- CHECK your rolls, and if they look done and golden when you pull them away from the sides of the slow cooker, screw what the recipe says and take them out! I would suggest cooking them for 1 hour and 15 minutes and checking them, and if they aren't done, check them again in 15 minute intervals. 

Eating around the slightly charred parts, these biscuits were fantastic. So chewy and sweet and soft and fluffy- I can't wait to make them a second time around and cook them a bit less.

Please do try them and taste for yourself, just cook them slightly less than I did, haha! <3 Enjoy!

    wow, those caramel rolls look so delicious!! i might have to try those out.

    i'm actually trying to get out of a no motivation rut, too. i like the advice to dance(something that sometimes helps) and to push through and do it anyway(something i've personally never been able to do, lol). lately, i've just been trying to read a lot and listen to a lot of new music to help myself get inspired. for me, connecting with nature also helps. go outside for a walk, or just sit on the grass and watch the world happen.

    It might seem weird but when I'm stuck in a rut it helps me to exercise. Usually I go out for a long bike ride and when I come back I feel refreshed and ready to go on with my day.
